"Swiss Cheese" Yogurt
Cover seeds with water and soak for 8 hours then pour off water and sprout for 8 hours. (It is best to use distilled or spring water.) Grind in a Vita-Mix Blender with Soft Wheat-Water and pour into a 1-1/2 quart jar. Cover jar with a cloth and secure with a rubber band. Ferment for 6 hours. Stir and use or refrigerate.
Recipe can be altered to make "cheese" by using 1/2 the liquid. Plain Almonds or Chick Peas with Juice of 1 lemon = Ricotta Flavor, Cashews = Cottage Cheese Flavor. Try Tan Sesame Seeds or other combinations of nuts and seeds for different flavors. Larger beans or nuts need 12 hours soak time.
